Our Story
In 1949, Nikolaos Makryonitis transformed a simple plot of land in Vari, Syros, into a beloved family tavern. With the help of his brother-in-law and two donkeys, he built the Bolas Tavern using stones from the Madronia area. In August, just in time for the grand festival, the tavern was ready and quickly became a favorite among locals.
Nikolaos’ wife, famous for her meatballs and fried fish, ran the kitchen with her sister, serving delicious dishes from a humble setup. Despite initial doubts, the tavern flourished, embodying the rich culinary traditions of Syros.
